Rooted Spud’s Second Food Truck Opens In Syracuse

SYRACUSE – The Rooted Spud celebrated the opening of its second food truck Friday with a ribbon-cutting ceremony alongside the Kosciusko Chamber of Commerce.
The new food truck is located at 201 E. Bowser Road, Syracuse.
The business began four years ago at Jellystone Park Campground and Resort and has continued to grow in popularity. Specializing in giant gourmet, Idaho baked potatoes, the menu features locally-sourced ingredients and consistently-sized potatoes through its partnership with the Idaho Potato Commission.
Owner Teri Cooper said the business sold nearly 8,000 baked potatoes last year. Menu options range from $5 to $15 and include a variety of toppings such as sour cream and cheese. A butter substitute is available for vegan customers, and all menu items are gluten-free.
Cooper said she recognized a gap in food options for people with dietary restrictions and aimed to fill that need.
In addition to baked potatoes, The Rooted Spud offers a selection of salads. A new item, “Rooted Shakers,” features six menu favorites reimagined as salad shaker bowls with custom, handcrafted dressings.
The truck also serves handcrafted “Rooted Rainbow” lemonades in four flavors, made with all-natural ingredients and freeze-dried fruit.
Looking ahead, Cooper plans to expand the business with a third food truck.
